Zucchini Chocolate Cake

Ingredients

  • 1 ¾ C sugar
  • ½ C canola oil
  • 2 eggs, lightly beaten
  • 2/3 C unsweetened applesauce
  • 1 tsp vanilla extract
  • 2½ C all-purpose flour
  • ½ C baking cocoa
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ C buttermilk
  • 2 C shredded zucchini
  • berries for topping

Instructions

  1. In a large bowl, beat sugar and oil on medium speed for 1 minute. Add the eggs, applesauce and vanilla; beat 1 minute longer.
  2. Combine the flour, cocoa, baking soda and salt; add to sugar mixture alternately with buttermilk, beating just until blended.
  3. Stir in zucchini.
  4. Pour batter into a greased 13-in. x 9-in. baking pan. Bake at 350° for 45 minutes or until a toothpick inserted near the center comes out clean.
  5. Cool on a wire rack. Top with berries before serving.
