Raw Beet Salad

A quick fresh salad that's big on flavour.


  • 3 cups beets, raw--just peel and grate
  • 2 cups grated carrot
  • 1 apple, peel on, grated
  • 1/2 cup pumpkin seeds, toasted
  • 1/2 cup parsley, finely chopped
  • salt and pepper to taste


  • 1/2 cup cider vinegar
  • 1/4 cup olive oil
  • 1 tsp finely chopped garlic


Prepare all salad ingredients. Mix together well in a bowl.

Combine vinegar, olive oil and garlic for the dressing in a small bowl. Drizzle over salad. Serve.

*You might like to add a bit of honey and/or dijon mustard to the dressing.
